COCONUT CASHEW PROTEIN PANCAKES

½ cup Vanilla Cream BioTrust Low Carb Protein Powder Blend
½ cup uncooked rolled oats
½ teaspoon baking soda
¼ teaspoon sea salt
½ teaspoon liquid stevia (or ½ banana)
1 teaspoon vanilla extract
3 tablespoons chopped cashews
¼ cup unsweetened shredded coconut, toasted and divided
4 eggs
1 cup low-fat cottage cheese
½ cup full-fat unsweetened coconut milk
Coconut oil for greasing
1.Preheat a pancake griddle or a large skillet over medium-high heat.
2.Combine the protein powder, oats, baking soda, salt, stevia, vanilla, cashews, 2 tablespoons of the coconut, eggs, cottage cheese, and coconut milk in a food processor. Pulse to combine until smooth.
3.Let the batter sit for 10 to 15 minutes to help your pancakes bind together.
4.Use a paper towel to carefully rub coconut oil on your preheated griddle or skillet. Reduce the heat to medium. Use a ¼-cup measuring cup to scoop the batter onto the griddle in nice big circles. When bubbles form (about a minute), flip the pancakes to cook on the other side. Sprinkle with the remaining 2 tablespoons coconut.
