ZUPPA TOSCANA

This is a classic Zuppa Toscana soup—creamy, flavorful and warms you to the bone. Not only is this soup super simple to make, it’s much better than the last time you had it at a chain restaurant. And healthier too!

MAKES: 5 servings

1 SERVING: 333 Calories, 25 g Fat, 6 g Carbs, 19 g Protein

 

2 tbsp (30 g) butter

1 lb (454 g) ground pork

¼ cup (40 g) onion, chopped

1½ tbsp (5 g) Italian seasoning

1 tsp crushed red pepper

3 cloves garlic, minced

6 cups (1.5 L) chicken broth

1 lb (454 g) radishes, quartered

20 oz (560 g) fresh spinach, chopped

8.5 oz (250 ml) canned full-fat coconut milk

Salt and black pepper, to taste

In a large stock pot over medium-high heat, add the butter and pork. Cook for 5 to 7 minutes, or until browned. Add the onion, Italian seasoning and crushed red pepper and sauté for 3 minutes. Add the garlic and stir for 1 minute, then add the broth and radishes. Bring the soup to a boil then reduce the heat and simmer, covered, for 10 minutes. Add the spinach and coconut milk and simmer for 5 minutes, until the radishes can be easily pierced with a fork. Add salt and black pepper to taste. Serve immediately.
