KASSEY’S KETO KASSEROLE

Casseroles are the backbone of weeknight dinners. They provide a tasty and nutritious meal for ourselves and our families. Kassey’s Keto Kasserole is a mix of all your favorite Keto ingredients rolled into one creamy, cheesy, vegetable-filled casserole!

MAKES: 6 servings

1 SERVING: 437 Calories, 30 g Fat, 7 g Carbs, 28 g Protein

 

1 head of cauliflower, cut into bite-sized florets

1 head of broccoli, cut into bite-sized florets

1 cup (240 ml) heavy cream

5 tbsp (73 g) cream cheese

3 cloves garlic, minced

1 tsp onion powder

1 tsp salt

2 tsp (5 g) ground mustard

½ tsp black pepper

2 cups (226 g) Cheddar cheese, divided

8 strips thick-cut bacon

1½ lbs (681 g) chicken thighs

Preheat the oven to 350°F (176°C).

Steam the cauliflower and broccoli florets for 10 minutes. Set aside.

In a saucepan set over medium heat, add the heavy cream, cream cheese, garlic, onion powder, salt, ground mustard and black pepper. Slowly whisk for 3 minutes. Add 1½ cups (170 g) of the Cheddar cheese and whisk for 5 minutes. Set aside.

In a separate pan, fry the bacon and slice into small pieces. Reserve 2 tablespoons (30 ml) of the bacon fat and add to the cream sauce. Using the same pan, cook the chicken thighs until cooked through and no longer pink, 8 to 10 minutes. Dice the chicken into bite-sized pieces.

In a 9 x 13–inch (23 x 33–cm) casserole dish, combine the steamed vegetables, cream sauce, bacon and chicken. Mix well and top with the remaining ½ cup (56 g) of Cheddar cheese. Bake until the cheese has melted, about 20 minutes.
