Fries were honestly the only thing I missed until I developed this recipe. These Loaded Halloumi Fries will satisfy your french fry cravings, without the carbs, especially when dipped into a “special” sauce with sweet and tart notes.

3 tbsp (45 ml) sugar-free ketchup
¼ cup (60 ml) mayo
½ tsp white vinegar
¼ tsp paprika
¼ tsp brown sugar replacement (I recommend Swerve) or erythritol
Pinch of black pepper
Pinch of salt
½ cup (120 g) coconut oil
1½ lbs (681 g) halloumi cheese
½ tsp oregano
½ tsp garlic powder
½ tsp onion powder
¼ tsp paprika
¼ tsp cayenne pepper, optional (omit if you do not like spicy)
8 strips bacon, cooked and chopped
1 tbsp (3 g) dried chives
Make the sauce by combining the ketchup, mayo, vinegar, paprika, sugar replacement, black pepper and salt. Set aside.
To prepare the halloumi, heat the coconut oil in a shallow pan over medium-high heat. While the oil is heating, slice the halloumi into “fries” about ½ inch (1.25 cm) thick. Be careful not to cut too thin. Sprinkle with the oregano, garlic powder, onion powder, paprika and cayenne pepper, if using. Fry in the coconut oil until the halloumi fries are golden brown, 4 to 5 minutes per side.
Top with the chopped bacon and chives.
TIP: You can make these in the air fryer. Cook at 390°F (200°C) for 8 to 10 minutes.
