This dish is DYNO-MITE. Sweet, spicy and a little bit creamy, this was inspired by one of my favorite P.F. Chang’s recipes. It does not disappoint.
MAKES: 4 servings
1 SERVING: 180 Calories, 9 g Fat, 0.5 g Carbs, 23 g Protein
1 lb (454 g) extra-large shrimp, peeled and deveined
3 tbsp (45 ml) mayo
2 tbsp (15 g) green onions, diced
1½ tbsp (22 g) chili paste
1 to 2 tbsp (7 to 15 g) erythritol Salt and black pepper, to taste
Place the shrimp on skewers and grill over medium-high heat until slightly pink, about 2 minutes per side. Mix the mayo, onions, chili paste, erythritol, salt and black pepper and brush over the shrimp when they have finished cooking.
TIP: If you aren’t a shrimp fan, chicken is a great substitute. Cut the chicken into bite-sized pieces and put on skewers. The meat will need longer to cook, about 7 minutes per side.
