Cocoa and Cardamom Whipped Cream with Berries
If you’ve never had fresh whipped cream, you are missing out. It is rich and fluffy in ways that commercial whipped cream can only dream of. Plus, it is more or less all fat, so it is perfect for our purposes. For a sweeter flavor, add powdered erythritol. I personally don’t think it needs that, but we’re all different.
YIELD: 1 serving
The Stuff:
½ cup heavy whipping cream
½ teaspoon cardamom
2 teaspoons unsweetened cocoa powder
¼ cup low-carbohydrate berries
pinch of powdered erythritol (optional)
What to Do:
1 Put heavy whipping cream in the work bowl of stand mixer and mix on high until stiff and fluffy, adding the cardamom, cocoa powder, and erythritol, if using, about halfway through.
2 Put into a bowl, add berries, consume!
TIP: If you have a stand mixer, this recipe is as simple as they get. If you do not have a power mixer you can make whipped cream by hand with a whisk. Just whisk the heavy whipping cream very aggressively until you want to die, and then whip it more until you get the consistency you are looking for.
