Salmon and Cream Cheese Omelet

YIELD: 1 serving

The Stuff:

       2 tablespoons olive oil

       3 eggs

       1 tablespoon heavy whipping cream

       3 ounces smoked salmon

       1 ounce cream cheese

       2 scallions, chopped

       salt and pepper, to taste

What to Do:

1 Heat the olive oil in a medium skillet over medium heat. In a bowl, whisk the eggs and heavy whipping cream together and pour into the skillet.

2 When the eggs begin to set, add the smoked salmon and cream cheese in chunks across the surface of the omelet. Cook for another 30 seconds to a minute until the eggs are set fully. Add half of the scallions and fold omelet.

3 Plate and garnish with the remaining scallions. Add salt and pepper to taste.
