I told you that I would be providing you with a few ways to use more sardines in your day-to-day routine. Many people are scared of the potent flavor of sardines and avoid them altogether. This, I contend, is a mistake. Sardines are wonderfully nutritious and, when properly prepared, appropriate for any meal.
I first saw a version of this recipe on the illustrious Alton Brown’s television show, Good Eats. I’ve since altered it so it fits my liking and is more ketosis friendly.
YIELD: 1 serving
The Stuff:
Quick Keto Bread (page 84)
½ lemon
1 can sardines packed in olive oil (with lemon, if available)
1 teaspoon crushed red pepper flakes
½ ripe avocado
½ teaspoon cilantro
salt and pepper, to taste
What to Do:
1 Slice the Quick Keto Bread in half and toast it in a toaster.
2 Zest and juice the lemon into a mixing bowl. Add the oil from the can of sardines, and crushed red pepper flakes to the bowl to create your marinade.
3 Add the sardines to this mixture and gently break them into half-inch chucks with a fork, making sure to cover with marinade.
4 Extract the flesh from the avocado, mash to desired consistency, and spread on the toast.
5 Top the avocado-covered toast with the sardine chucks, a sprinkle of the remaining marinade, cilantro, salt, and pepper.
