The cooking times in the charts that follow are those recommended by the National Cattlemen’s Beef Association. Note that these are total cooking times (not per side) and should be considered general guidelines. Variances in specific makes and models of gas grills and ovens and the variability of charcoal cooking, depending on environmental factors and differences among types of wood and charcoal, will impact results. Take note of the suggested cooking times given within each recipe, but for best results, get to know your own grill setup.
