After the Second World War, it was made compulsory for British schools to serve cooked meals to their pupils, and this would normally include a pudding. Certain puds were favoured by dinner ladies because they were low-cost and easy to cook in large quantities for crowds of hungry schoolchildren, and so treats such as jam roly poly, rice pudding and treacle tart became a regular feature of school dinner halls up and down the country. Many of the recipes in this chapter will be remembered fondly by those who devoured them as kids. They will fill you with warmth and nostalgia for childhood and days gone by.
