VEGAN CARAMELISED ONION DIP


DIPS usually contain cream cheese or sour cream. In this recipe, cashew nuts make a creamy and delicious dip without any dairy products.


SERVES 4

200 g raw cashew nuts

1 Tbsp extra virgin olive oil

1 large brown onion, thinly sliced

Sea salt and freshly ground black pepper to taste

Squeeze of lemon juice

Pinch of dried chilli flakes (optional)

  1.  Soak the cashew nuts in water for 4 hours.

  2.  Add the oil to a pan, add the onion and cook over low coals, stirring frequently, for 45 minutes, until the onion is caramelised. Let cool to room temperature.

  3.  Drain and rinse the cashew nuts and place in a food processor. Blitz the nuts to a creamy consistency.

  4.  Spoon the creamed nuts into a bowl and add the caramelized onion. Mix well, season with salt and pepper, lemon juice and chilli flakes if using, and serve.
