BRAAIED CORN WITH MISO BUTTER GLAZE


CORN on the cob needs lots of butter. The sweetness of the corn holds up so well against the salty umami of the miso, so mixing butter and miso to slather on a hot corn on the cob makes perfect sense. If you can’t find white miso, use red miso and reduce the quantity to 1 Tbsp to start with and then add more if desired.


SERVES 4

4 corn on the cob

FOR THE MISO BUTTER GLAZE

100 g unsalted butter, softened

3 Tbsp white miso

2 Tbsp maple syrup

  1.  Mix the miso butter ingredients in a small bowl and set aside.

  2.  Shuck and clean the corn. Place the corn on a braai grid directly over a very hot fire and braai for about 10 minutes, turning occasionally, until cooked through and charred.

  3.  Serve immediately with the miso butter slathered all over the corn.
