Super simple, super crunchy and so refreshing.
SERVES 4
1 large cucumber, chopped into chunks
200 g radishes, halved
FOR THE DRESSING
3 Tbsp rice wine vinegar
1 Tbsp sesame oil
2 tsp castor sugar
1 tsp sea salt
1 cm piece fresh ginger, finely grated
1 large clove garlic, minced
1. First make the dressing by combining all the ingredients together in a large bowl.
2. Add the cucumber to the dressing, toss to coat and let it stand for 10 minutes.
3. Add the radishes, toss again and serve immediately.
