MELON, MINT & FETA SALAD WITH ORANGE BLOSSOM WATER
The orange blossom water in this salad brings a beautiful fragrant taste to this salad, one that can transport you to an orange orchard -- it’s absolutely amazing.
SERVES 4
Olive oil non-stick spray
½ melon, seeds removed
⅓ cup orange blossom water
1 disc feta cheese
¼ cup fresh mint
Lemon-flavoured olive oil
1. Cut the melon into wedges and remove the outer peel.
2. Make sure the braai grid is clean and sprayed with an olive oil non-stick spray. Place the melon on the braai grid and caramelize for 1 - 2 minutes on each side. Remove and cut into large chunks, place in the fridge to cool.
3. Once cooled, pour over the orange blossom water and mix well.
4. Crumble over the feta cheese, sprinkle with mint and drizzle with lemon-flavoured olive oil.
