This CUCUMBER salad is delicious on its own or served in a pita, hot off the coals, with chewy strips of halloumi.
SERVES 4
2 cups diced cucumber
¼ cup capers
¼ cup diced red onions
FOR THE DRESSING
½ cup Greek yoghurt
1 Tbsp extra virgin olive oil
2 Tbsp lime juice
1 clove garlic, chopped
½ cup fresh mint
Pinch of salt and pepper
1. Combine the ingredients for the dressing in a blender and blend well.
2. Add the cucumber, capers and red onions to a salad bowl and toss lightly.
3. Add the salad dressing and mix well. Taste and add some more salt and/or pepper if necessary.
