FREEKEH SALAD


FREEKEH is a cereal food made from green durum wheat that is roasted and rubbed to create its unique flavour. You can replace the freekeh with quinoa or bulgur wheat. This salad can be served warm or cold.


SERVES 4

¼ cup extra virgin olive oil

½ red onion, chopped

1 Tbsp ras el hanout (see page XX)

¾ cup freekeh, sifted

cups water

½ cup brown lentils, cooked

1 cup chopped fresh parsley and mint

1 Tbsp pomegranate molasses

8 dried Turkish apricots, diced

3 Tbsp chopped pistachio nuts

Salt and pepper to taste

¼ cup crumbled feta cheese

  1.  Heat the olive oil and fry the onion until translucent.

  2.  Add the ras el hanout and stir for 1 minute. Add the freekeh and stir for another 2 minutes to reach a slightly nutty flavour.

  3.  Cook for 10 minutes until there is no more water left and the freekeh is cooked. Add the brown lentils and mix well.

  4.  Cook for a further 2 minutes, then remove from the heat and place in a serving dish.

  5.  Add the rest of the ingredients, except the feta cheese, and mix well. Garnish with feta cheese and serve.
