VEGAN BRAAIED PINEAPPLE & BANANA SOFT SERVE
Few things beat just-churned ICE CREAM. Soft and creamy, no added sugar and scooped onto a crisp cone, it takes you straight to a beach holiday. This recipe takes some planning ahead and you will need a food processor but it is worth it!
SERVES 6
500 g fresh pineapple, peeled, cored and sliced
Olive oil for brushing
4 medium bananas, sliced in large chunks
1 × can (400 ml) coconut milk, chilled overnight
1 Tbsp lemon juice
1 tsp salt
1. Brush each pineapple slice lightly with some oil and braai each side for 3 minutes over medium-hot coals until caramelised and beginning to char.
2. Once all the slices have been braaied, place them in a container and freeze with the banana pieces.
3. Place the pineapple, banana, coconut milk, lemon juice and salt in a food processor and blitz until smooth and creamy.
4. Place in a suitable container and freeze for a few hours until frozen but still easy to scoop.
