VEGAN GIN & TONIC JELLIES


The craft gin revolution is here to stay and there are some fantastic new tonics on the market, so grab your favourites for these JELLIES.


SERVES 8

¼ cups water

300 g castor sugar

tsp agar agar powder

Grated zest and juice of 2 limes

Pinch of salt

cup good quality tonic water

1 cup craft gin

Fresh berries to serve

  1.  Bring the water, sugar, agar, lime zest and salt to a boil, stirring to dissolve the sugar and agar.

  2.  Reduce the heat and simmer for 3 minutes.

  3.  Add the lime juice, tonic water and gin and mix well. Pour into serving glasses and refrigerate until set.

  4.  Decorate with fresh berries and serve.
