Delight everyone with this drink – it’s festive, bubbly and delicious. You could also easily turn it into a sorbet for dessert.
MAKES ABOUT 3 CUPS
FOR THE CORDIAL
2 cups water
2 cups castor sugar
1 cup passion fruit pulp (fresh or canned)
Juice of ½ lemon
1 tsp citric acid
½ tsp salt
TO SERVE
Sparkling wine or Champagne
Ice
Fresh mint
1. Place all the ingredients for the cordial in a saucepan and heat over a medium heat. Stir until the sugar has dissolved, then bring to a boil, take off the heat and allow to cool completely. Taste if the cordial needs some extra lemon juice.
2. Serve 1 part cordial to 3 parts bubbly over lots of ice and garnish with fresh mint.
3. Keep any leftover cordial in a clean and airtight container, refrigerated for up to 4 weeks.
