BEER & RASPBERRY SHANDY

This is a sweet and tangy twist to the BEER shandy. So delicious and a beautiful colour, it is sure to find favour with your guests. Keep the beer on the lighter side so as to not overpower the other flavours.

SERVES 6

cups frozen raspberries

1 cup sugar

1 cup freshly squeezed lemon juice

3 bottles (340 ml each) blonde pale ale

½ tsp salt

Crushed ice for serving

  1.  Add the frozen berries, sugar and lemon juice to a large jug. Allow the mix to stand at room temperature for about an hour, stirring a few times, so that the sugar dissolves. Add the beer and salt and stir to combine.

  2.  Taste the shandy and adjust the lemon and sugar to your taste. Add some ice and serve.
