Look for fresh Chinese egg noodles (lo mein) in the produce section of the supermarket. We’ve omitted the salt and pepper from this recipe because the sauce is very well seasoned.

ounces shiitake mushrooms, stemmed and sliced ¼ inch thick |

small head (1½ pounds) napa cabbage, sliced crosswise ¼ inch thick |

red bell pepper, stemmed, seeded, and sliced thin |

scallions, sliced thin |

tablespoon grated fresh ginger |

ounces fresh Chinese noodles or 8 ounces dried linguine or spaghetti |

1. Whisk broth, soy sauce, oyster sauce, and sesame oil together in bowl. Heat 1 tablespoon vegetable oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add chicken to skillet in single layer and cook without stirring until it begins to brown, about 2 minutes. Stir and continue to cook chicken through, about 4 minutes longer; transfer to bowl and cover.
2. Add remaining 1 tablespoon vegetable oil and mushrooms to now-empty skillet and cook until lightly browned, about 5 minutes. Stir in cabbage and bell pepper and cook until cabbage is just wilted, about 2 minutes.
3. Stir in scallions, ginger, and garlic and cook until fragrant, about 30 seconds. Stir in chicken with any accumulated juices and soy sauce mixture and cook until heated through, about 1 minute; cover and set aside.
4. Meanwhile, bring 4 quarts water to boil in large pot. Add noodles and cook, stirring often, until tender. Drain noodles and return to pot. Add chicken mixture and cilantro, if using, and toss to combine. Serve.
VARIATIONS
EASY BEEF LO MEIN
Substitute 8 ounces flank steak, sliced thin across grain on bias (click here), for chicken; cook as directed in step 1, reducing overall cooking time to 2 minutes.
EASY SHRIMP LO MEIN
Substitute 8 ounces large shrimp, peeled and deveined, for chicken; cook as directed in step 1, reducing overall cooking time to 2 minutes.
