winter fruit salad

This is my jazzed-up version of a winter fruit salad. It’s one of those minimal effort, maximum flavor recipes. Just a gentle squeeze of citrus on the apples and pears (which brings out the flavor and prevents them from turning brown) and a light toss with dried fruit turn this fruit salad into something truly out of the ordinary.

Makes 2 servings

1 apple, any variety you enjoy

1 pear

¼ cup dried apricots

¼ cup raisins

2 teaspoons lemon juice

1. Core the apple and pear and cut them into ½-inch cubes.

2. Dice the apricots and raisins.

3. Place all the ingredients in a bowl and toss to coat with the lemon juice.

NOTE: You can also add pomegranate seeds, dried cherries, or dried cranberries.
