fruity cottage cheese salad

I detested cottage cheese as a kid . . . that is, until I saw someone eating it topped with mandarin oranges and pineapple at the salad bar of one of our family’s favorite restaurants. The next thing you know I was asking my mom to serve me cottage cheese adorned with fruit every morning. Even now, I’m not the biggest lover of plain cottage cheese, but top it with assorted sweet fruit and I’ll hoover every last bite. Which is exactly what my kids tend to do, too, whenever I put this dish in their lunch boxes.

Makes 2 servings

1 cup cottage cheese

½ cup diced apple

¼ cup diced pineapple

¼ cup diced dried apricots

Place all the ingredients in a bowl and toss to combine.
