I love devising recipe ideas based solely on what’s in my fridge, and whenever I arrive upon something fun, I keep making it nonstop until my family burns out on it for a while. One recent obsession of mine was creative quesadillas.
While you rarely see sweet quesadilla recipes, I thought this cheesy quesadilla with apples and honey was a neat idea, and Kenya really enjoyed helping me experiment with it. We made some with applesauce and others with thinly sliced apples. We couldn’t decide which version was more delicious. If you’re in need of a quick recipe that will satisfy a sweet and savory craving, make your kids some of these.
1 Granny Smith apple, peeled and sliced thin, or ⅓ cup applesauce
4 whole-wheat or spelt tortillas
1⅓ cup grated Cheddar cheese
Honey, for drizzling
1. Place half of the apple slices (or 3 tablespoons of the applesauce) on a tortilla and top with half of the cheese and a drizzle of honey.
2. Cover with another tortilla.
3. Slide the quesadilla into a sauté pan over medium heat and cook for 3 minutes on each side. Cut the quesadilla into wedges using a knife or pizza cutter.
4. Continue with the rest of the tortillas and serve warm.
