Our family doesn’t eat a lot of meat, but whenever we go out for brunch with my in-laws and they order bacon, the kids go c-r-a-z-y. So much so that they’ve been known to order extra servings to satisfy their cravings.

When you mix crispy bacon with roasted turkey, fresh slices of tomato, and a hearty slice of Cheddar, it’s a classic combo that’s pretty darn out of this world. But don’t take my word for it—just ask my two bacon lovin’ babies.

Makes 2 servings

4 slices whole-wheat bread

4 slices cooked bacon

1 small tomato, sliced

2 slices roast turkey, thinly sliced

2 slices Cheddar cheese

1. Preheat a panini maker.

2. Place 2 slices of bread on a plate and top each with 2 slices of bacon and tomato and 1 slice of turkey and Cheddar.

3. Top the sandwiches with the remaining 2 bread slices.

4. Place the sandwiches in the panini maker and grill for 4 minutes, or until the cheese is melted and the bread is golden.

TIP: To make crispy bacon, place bacon on an ovenproof rack over a sheet pan lined with foil and bake at 400°F for 20 minutes or heat a large sauté pan over medium heat and cook for 8 minutes, or until golden brown and crispy. Place the bacon on several layers of paper towel to drain off excess oil.
