bananamana–cream cheese sammie

My husband is really into eating breakfast sandwiches for (what else) breakfast, so of course Kenya and Chloe always want whatever he’s having. Although this Bananamana–Cream Cheese Sammie is ideal first thing in the morning, it isn’t exclusively for breakfast. This gratifying carb-filled treat is perfect for lunch and should keep everyone full of energy until dinner!

Makes 2 sandwiches

1 banana

¼ cup cream cheese

4 slices whole-wheat bread

1. Cut the banana in half crosswise, then cut each half into thin lengthwise strips.

2. Spread 2 tablespoons cream cheese on 1 slice of the bread and top with half the banana slices. Place another piece of bread on top to make a sammie.

3. Repeat to make the second sammie.

ELISHEVA: My family eats plain bananas only when they are “just ripe,” so I am constantly looking for creative ways to use up bananas that are a bit softer. The Bananamana–Cream Cheese Sammies and Banana Dog Bites are two great ways to use up those extra bananas and both are big hits with my daughter!
