chicken pesto panini

We have a garden full of fresh basil most of the year, which in turn means we always have a freezer full of pesto. That’s a very good thing, since pesto is a mealtime lifesaver. It gives zip and zing to anything from pasta to rice and really distinguishes this mouthwatering panini.

Makes 2 servings

4 teaspoons Everyday Basil Pesto

4 slices sandwich bread

2 slices mozzarella cheese

1 cooked chicken breast, sliced

1. Preheat a panini maker.

2. Spread 1 teaspoon of the pesto on each slice of bread.

3. Layer cheese and chicken on 2 of the slices and top with the remaining slices.

4. Place each sandwich in the panini maker for 3 minutes, or until cheese is melted and bread is golden brown and crisp.

5. Cut into quarters and serve.
