This recipe came about one day when I had planned on making wraps, but ran out of tortillas. I’m a bit type A when it comes to a plan, so I was compelled to become creative. Out came my rolling pin and a piece of wholewheat sandwich bread to fashion my own “flat bread.” I liked the results of this recipe so much that I still make this sandwich this way even when I have tortillas on hand!
1 cup chopped cooked chicken
2 celery stalks, diced
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
2 teaspoons lemon juice
¼ teaspoon salt
4 slices whole-wheat sandwich bread
1. In a bowl, combine the chicken, celery, mayonnaise, Dijon, lemon juice, and salt and toss to mix well.
2. Using a rolling pin, roll the bread to ¼ inch thick.
3. Spread ¼ cup of the chicken salad mixture on each slice of bread and roll it up.
TIP: If you have younger kids, you can secure the roll-ups by gently putting a rubber band around them.
