I endeavor to make lunches that are plenty nutritious and wholesome, but every once in a while I give in to my kids’ worship of butter. “Worship” is hardly a strong enough word. Many are the times I’ve caught Kenya and Chloe at a restaurant eating whole pats of butter!
On those occasions when my willpower is at its lowest, I treat them to a hunky pretzel roll slathered with good-quality butter and thick slices of prosciutto. Not the healthiest of recipes, but it’s delectable and makes my kids endlessly happy.
4 teaspoons softened butter (I like Kerrygold or Horizon)
2 pretzel rolls, cut in half (available at Trader Joe’s or specialty German bakeries)
4 slices prosciutto
1. Spread 1 teaspoon butter on each piece of bread.
2. Top the bottoms of the rolls with 2 slices of prosciutto and add the roll tops.
3. Cut each sandwich in half diagonally and serve.
