Being the annoying type of mom I am, I try to put something different in my kids’ lunches daily, so that they don’t get fixated on always eating the same thing. Little good that’s done—both of my kids are still grilled cheese obsessed.
If your little one loves grilled cheese every day, try making him or her one of these cut-out sammies, which puts a fun spin on the classic. I let the kids help me make this before school in the morning, giving them cookie cutters to make various shapes in the bread, which they love doing. Letting your kid put her initial in the middle of her sandwich is about as awesome as it gets, or give her a big heart cutter for extra love. Lunch doesn’t get more personalized than this.
8 slices whole-wheat sandwich bread
Unsalted butter
4 slices Cheddar cheese
1. Using a heart-shaped cookie cutter, cut the centers out of 4 slices of bread.
2. Heat a pat of butter in a large griddle or skillet over medium heat.
3. Place both a cutout bread slice and a whole slice on the griddle and cook for 3 minutes.
4. Flip the whole piece of bread, cover with a slice of cheese, and top with the piece of cutout bread. Cook 3 minutes, or until the cheese is melted.
5. Repeat with the rest of the bread and cheese to make 3 more sandwiches.
