tapenade–cream cheese pinwheels

This recipe calls for only three ingredients, all of which stay fresh in your fridge for weeks, and it takes just a minute or so to make, so when you have to get something awesome in your kid’s lunch box in a hurry, these are a total no brainer. I asked Kenya what he liked best about these tasty rolled-up sandwiches, and he said, “They’re easy to eat, really creamy, and salty.”

Makes 2 servings

2 slices whole-wheat sandwich bread

3 tablespoons cream cheese

3 tablespoons Cheesy Olive Tapenade

1. Using a rolling pin, flatten the bread to ¼ inch thick.

2. Spread each slice of bread with 1½ tablespoons cream cheese and top with 1½ tablespoons tapenade.

3. Roll the bread into pinwheels. The cream cheese will act as a glue to hold the rolls together. Cut into bite-size pieces and serve.
