As my kids get older, I find they want to eat salads more and more. It’s not what you’d expect from a six- and four-year-old, but I found that once I started adding more lettuce and tomato to their sandwiches and wraps, they started to request them.
But even with veggie-loving kids, adding a hit of smoky bacon can only make their smiles wider. To keep these Turkey BLTA Wraps on the leaner side, I use light mayo and turkey bacon, but feel free to use whatever you prefer. With the addition of avocado, this is my twenty-first-century version of the classic BLT, only better!
4 teaspoons mayonnaise or Vegenaise
2 whole-wheat tortillas
½ cup chopped romaine lettuce
¼ cup diced tomato
½ avocado, diced or sliced
2 slices bacon, cooked and chopped
4 slices roast turkey
1. Spread 2 teaspoons mayonnaise on each tortilla, making sure to cover the edges of the tortilla, since the mayonnaise will act as a glue to hold the wraps together.
2. Layer the lettuce, tomatoes, avocado, bacon, and turkey on the edge of the tortilla closest to you.
3. Wrap up like a burrito and serve.
