I requested a lot of turkey and cheese sandwiches when I was a kid. I remember throwing a fit if my mom didn’t have sliced turkey or Cracker Barrel Cheddar on hand (heavens, was I demanding). Even today when I want something übercomforting, it is my go-to sandwich.
It was only a few years ago that I thought about turning this timeworn favorite of mine into a warm pressed sandwich. It totally takes it to another level, and my kids are always psyched to find it in their lunch boxes. I wish I’d known about paninis when I was a kid!
4 slices whole-wheat sandwich bread
4 slices thin deli turkey
4 slices Cheddar cheese
1. Preheat a panini press on a medium setting.
2. Place 1 slice of bread on a flat surface.
3. Layer 1 slice of cheese, 2 slices of turkey, 1 slice of cheese, and 1 slice of bread. Repeat to make the second sandwich.
4. Cook the sandwiches in the panini press for 3 minutes, or until the cheese is melted.
5. Slice into quarters and serve.
