As much as I love making pancakes from scratch, the convenience of having a good premade mix is essential for time-challenged moms. There have been plenty of sleep-deprived mornings when I’ve had to get the whole family out the door and wearily reached for my beloved box of Kodiak Cakes pancake mix. Easy to make, and made from wholesome ingredients, they turn out awesome pancakes every time. But with a price tag of almost $6 a box, I resolved one day to create my own simple mix.

It took me a bit of experimentation, but I finally was over the moon—I mean really over the moon—with this outcome. It actually may be one of my favorite weelicious recipes because of its versatility. I use this mix to make waffles, too, and my kids say they’re the best they’ve ever had!

This recipe makes a bit more mix than what you’d normally find in a box of the premade stuff, but I find that to be a plus, especially if you have a house full of pancake or waffle lovers.

Makes 6 batches of pancake mix serving 4 each

6 cups white whole-wheat flour

⅓ cup sugar

2 tablespoons baking powder

1 tablespoon baking soda

2 teaspoons salt

1. Whisk together all the ingredients until well combined.

2. Store in an airtight container in a cool, dry place.
