One of our favorite vendors at our local farmers’ market is Marilyn, or “the fish lady” as we affectionately call her. Marilyn and her sister Eileen sell the most amazing, fresh seafood and she loves showering our kids with special gifts from the sea. One item she always gives them is a slice or two of her home-smoked salmon. My husband grew up eating a lot of smoked fish and he swears Marilyn’s is the best he’s ever eaten.
Since Chloe can’t seem to get enough of the “smokey,” as she calls it, I decided to make these beautiful little Smoked Salmon and Cream Cheese Bites to add to her lunch rotation. They’re ideal because they’re easy for her to pick up and eat—and they look just like little sushi rolls!
4 tablespoons cream cheese (I use whipped cream cheese because it’s easier to spread)
2 whole-wheat or multigrain tortillas
4 to 6 slices smoked salmon
1. Spread 2 tablespoons cream cheese evenly on each tortilla.
2. Place smoked salmon in a layer covering the cream cheese.
3. Roll up the tortillas into cylinders and cut them into rolls.
