I’m sure there are plenty of parents with selective eaters who could never imagine their culinarily challenged kids eating a veggie sandwich overflowing with crunchy cucumbers and carrots and slathered with luscious hummus and pesto, but I’ve got two kids who consistently surprise me when they make short work of this sandwich, which is practically a salad on bread. It’s full of nutritious foods you want your kids eating and perfect for all those budding vegetarians in your life, since they can get protein, carbohydrates, and vegetables all in one place. Whether you’re a vegetarian or not, this sandwich is plain old good eatin’.
2 tablespoons Everyday Basil Pesto or Supereasy Hummus
4 slices whole-wheat sandwich bread
1 small avocado, pitted, peeled, and sliced
1 tomato, sliced
1 Persian cucumber, thinly sliced lengthwise
2 tablespoons sprouts
2 slices cheese (Cheddar, mozzarella, Swiss, or Monterey Jack)
1. Spread ½ tablespoon pesto on each slice of bread.
2. Layer the avocado, tomato, cucumber, sprouts, and cheese on 2 slices of bread and top with the remaining bread slices.
