One Sunday when we were attempting some pizza creations, Chloe was on the kitchen floor playing “chef” with my muffin tins. It gave me an idea: Pizza muffins! Pizza is already totally kid-friendly, but when it’s cooked in the shape of a muffin, it adds an insanely cool and appealing twist to that same old slice you’re used to.
When I told my husband about my inspiration for this recipe, the first thing he said was, “Thank goodness Chloe wasn’t playing with a Jell-O mold.“
Olive oil or cooking spray
2 disks White Wheat Pizza Dough
¾ cup Veggie-Heavy Pizza Sauce
¾ cup shredded mozzarella cheese
OPTIONAL TOPPINGS
sliced mushrooms, diced cooked chicken or ham, diced red pepper, sliced olives, or whatever you and your kids love. The possibilities are endless.
1. Preheat the oven to 450°F and grease a muffin pan with olive oil or cooking spray.
2. Roll out the dough into a thin 16 x 12-inch rectangle. Cut it into 12 squares of about 4 x 4 inches. You can also do rounds with a 4" cookie cutter.
3. Place 1 dough square/round in each cup, making sure that the corners of the dough are sticking out and gently press the edges of the dough onto the pan.
4. Brush the edges of the dough with olive oil.
5. Bake the dough for 8 minutes, or until the dough feels dry to the touch.
6. Pour 1 tablespoon of sauce into each cup and evenly distribute the cheese among the cups. If you’re adding more toppings, now’s the time!
7. Bake for 5 to 6 minutes, until the cheese is golden and bubbling.
