Plain yogurt is packed with calcium and protein, and it’s easier to digest than milk, but to kids, plain yogurt can be as ordinary as its name. In order to get most kids to eat yogurt, you have to entice them with the flavored varieties sold at the grocery store. But many popular brands are full of additives, so I thought it would be fun to see how plain Greek yogurt (which I prefer because it’s twice as high in protein as regular yogurt and has half the sugar) tasted when swirled together with creamy, nutritious peanut butter and natural sweeteners that are lower in sugar. I’m happy to report that not only is this recipe beautiful to look at—it’s mind-blowingly delicious too!
2 cups plain yogurt (I like using Greek yogurt)
¼ cup natural or low-sugar jelly, jam, or preserves
¼ cup smooth peanut butter (see Note)
1. Divide the yogurt among 4 bowls.
2. In a small saucepan, heat the jelly or preserves over low heat for 1 minute, or until liquefied. Set aside to cool. (You can also zap it for 30 seconds in a bowl in the microwave.)
3. Drizzle the jelly and peanut butter equally among the bowls of yogurt and swirl the contents together.
NOTE: If using traditional peanut butter brands such as Jif or Skippy, melt it in the microwave for about 15 seconds to soften. You can also use natural peanut butter, which tends to already be a bit more liquefied.
STEPHANIE: This peanut butter and jelly yogurt is a favorite in our house. We are yogurt lovers (I mean we eat it for every meal!), and adding PB and J is a great way to make it filling. We’re obsessed!
