pb&j croutons

This is my version of a deconstructed PB&J. I can’t stand it when bread goes stale, so I started turning it into toasted bread cubes to be used in salads, to munch on as a healthy snack, or for dipping into peanut butter and jelly, as in this simple idea.

Makes 2 servings

½ cup cubed bread

½ teaspoon canola or vegetable oil

1 tablespoon smooth peanut butter

1 tablespoon preserves

1. Preheat the oven to 450°F.

2. Place the bread on a baking sheet, drizzle with the oil, and toss to coat.

3. Bake for 15 to 20 minutes, or until golden brown.

4. Place the peanut butter and jelly in a dip container side by side, or mix them together.

5. Serve the croutons with the peanut butter and jelly for dipping.

TIP: The toasted bread cubes can also be used to dip into Roasted Carrot Hummus, Black Bean Hummus or Veggie Cream Cheese Spread.
