1 cup crushed pita chips
½ cup chopped cucumbers
¼ cup chopped kalamata olives
¼ cup diced tomatoes
3 tablespoons crumbled feta cheese
1 tablespoon freshly squeezed lemon juice
1 tablespoon extravirgin olive oil
¼ teaspoon salt, or to taste
In a bowl, mix together all the ingredients.
NOTE: To make pita chips, slice pita bread into wedges and bake in a 350°F oven for 10 to 15 minutes, or until crisp.
