Oh how happy my kids would be if I put a burrito in their lunch boxes every day. While I’m at it, I shouldn’t exclude my hubby, who loves taking them to work.
Simply stuffed with a lighter version of traditional refried beans and lots of grated, melted cheese, they’re easy to hold for little ones and filling enough for the bigger kids and adults.
1 cup Healthy Retried Beans
2 whole-wheat tortillas
½ cup grated Cheddar cheese
OPTIONAL ACCOMPANIMENTS
chopped tomatoes, guacamole, sour cream, shredded lettuce
1. Spread half the refried beans on each tortilla and sprinkle with Cheddar cheese.
2. Roll into burritos.
3. Microwave for a few seconds to melt the cheese, if desired.
