chicken satay bites

Tender morsels of marinated and baked white-meat chicken in a rich sauce made from nut butter mixed with the Asian flavors of sesame, ginger, and soy? You’d better double up on this recipe, because when you send your kids to school with these Chicken Satay Bites, they may come home craving more!

Makes 4 servings

1 tablespoon nut butter (almond, peanut, or sunflower butter)

1 garlic clove, minced

1 teaspoon grated ginger

1 tablespoon soy sauce

1 tablespoon honey

½ teaspoon sesame oil

2 boneless, skinless chicken breasts, cut into 1-inch cubes

1. Preheat the oven to 400°F.

2. In a medium bowl, combine the nut butter, garlic, ginger, soy sauce, honey, and sesame oil.

3. Add the chicken to the marinade, cover the bowl, and marinate for 20 minutes to overnight in the refrigerator.

4. Place the chicken on a baking sheet and bake for 14 minutes, or until golden and cooked through.
