Often the simplest foods are the most popular. Take these corn wheels, for instance. Simply slicing an ear of corn into rounds makes it fun and even easier for small hands to hold. Roll the rounds in some grated Parmesan cheese and you’ve just added a bit of protein that your kids will love.

Makes 2 servings

2 ears fresh corn on the cob, shucked

2 tablespoons grated Parmesan cheese

1. Bring a large pot of water to a boil. Add the corn and boil for 4 minutes.

2. Remove the cobs from the water and slice them into 1-inch coins.

3. Pour the Parmesan into a shallow dish and roll the wheels in the cheese until evenly covered. Serve.

NOTE: You can also slice the corn off the cob after cooking and sprinkle with the cheese, which my kids call corn sheets.
