There’s nothing worse than sending your child to school with a lunch box packed full of fresh veggies only to have them come back home exactly the way you sent them: uneaten. My advice? Add a dip like this one and see if it convinces your kid to munch and crunch on the good stuff.

As many weelicious readers know, we’re big on dips in our house. I find that whenever I put out a big platter of veggies and accompany it with a yummy dip, the variety of vegetables I can get into my kids’ little bodies increases by . . . well, a lot! Case in point was the day I made this Avocado Honey Dip. Chloe was sitting at the kitchen counter next to me while I was concocting it and asked if she could try some, so I made up a little plate for her with baby carrots, sugar snap peas, and pretzels. Chloe dug in and in a matter of seconds, she had finished what I gave her and had her little arms wrapped around the mixing bowl possessively. In her mouth was the spatula I had used to stir it. You can’t ask for a better review than that!

Makes 1 cup

1 ripe avocado, peeled and pitted

¼ cup whipped cream cheese

1 tablespoon lemon juice

1 tablespoon honey

1. Place all the ingredients in a bowl and mash together until smooth.

2. Serve with cut-up veggies, crackers, pretzels, or even as a spread on toast.

TIP: A ripe avocado should be soft to the touch but not mushy.

NOTE: This dip also works great as a sandwich spread.
