caramelized onion dip

If I was going to make a top ten list of Foods I Think Kids Will Avoid, onions would be at the top. However, I no longer assume what kids will and won’t like, as they continually surprise me at every turn.

The ingredient list for this dip features a big, juicy onion that caramelizes to perfection during cooking and becomes sweet—not at all what you might expect—mellowing out any strong onion flavor. When pureed with the Greek yogurt, it results in mouthwatering creamy perfection!

Makes 1 cup

2 tablespoons olive oil

1 large white onion, chopped

1 large garlic clove, chopped

½ cup plain Greek yogurt

½ teaspoon salt

OPTIONAL ACCOMPANIMENTS

celery, radishes, sugar snap peas, carrots, crackers, or pita chips

1. Heat the oil in a sauté pan over low to medium heat. Add the onions and garlic, and cook for 15 minutes, stirring occasionally, until the onions are soft, golden, and slightly mellowed. Set the onions aside to cool.

2. Place all the ingredients in the bowl of a food processor and pulse to finely chop and combine.

3. Chill and serve.
