These Cranberry Cheese Balls came about on a day when I had grated way too much Cheddar for another recipe. Chloe and I started rolling the excess into balls and then popping them in our mouths, one after another. We decided to take different dried fruits and roll them into the balls as well, and surprise, surprise—they turned out to be pretty good. Not bad as a vegetarian snack, and perfect for the lunch box.
2 tablespoons dried cranberries
1 cup grated Cheddar cheese
1. Chop the cranberries into small pieces.
2. In a bowl, combine the cranberries and cheese.
3. Using a small ice cream scoop or a tablespoon, roll the mixture into 12 small balls. Press and shape them to hold them together. Serve immediately or refrigerate until ready.
TIP: You can substitute dried cherries, blueberries, or apricots for the cranberries.
