When it comes to food, sometimes my husband is just as creative as my kids. Take, for instance, this Greek yogurt loaded with cinnamon, honey, and walnuts. The first time hubby made it was one Sunday night after dinner. I had offered the kids ice cream for dessert, and because they hadn’t really eaten a lot of their dinner, he jumped in and said, “I’ve got something much better than ice cream.” Coming from me these words might not have had the same powerful effect on Kenya and Chloe, but Daddy is known for some of the culinary tricks he has up his sleeve, and they went for it.
Minutes later my mixologist husband was ladling this light golden mixture into colorful bowls and the kids were devouring it. When they asked for seconds, it was confirmed this recipe was a hit, and a genius one at that. While it’s an inspired dessert, it’s also a healthful and protein-rich treat I feel extra good about serving for breakfast, in the lunch box, and on those we didn’t eat all our dinner but demand dessert nights like the one that inspired this recipe. Plus, how many things can you offer your kids that trump ice cream?
1½ cups plain Greek yogurt (0% or 2%)
1 teaspoon ground cinnamon (or more to taste)
3 tablespoons honey
⅓ cup walnuts, chopped
OPTIONAL ACCOMPANIMENTS
fresh or dried berries, diced bananas, kiwis, mango, or granola
1. Place all the ingredients in a bowl and stir to combine.
2. Serve with the optional accompaniments as desired.
