When I was growing up, one of my neighbors was a charming woman named Mrs. Wolf. In her seventies, she was sweet, wise, and very good to me. Many days after school I would make a beeline over to her house for long conversations while she refilled a bowl over and over with homemade Chex mix. Even now, whenever I see a row of Chex cereal boxes at the supermarket I can’t help but think of Mrs. Wolf, our sweet chats, and one of my favorite savory nibbles.
2 cups Rice Chex cereal
2 cups Wheat Chex cereal
2 cups O’s cereal, or Cheerios
1 cup slivered almonds
½ cup grated Parmesan cheese
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
3 tablespoons olive oil
1. Preheat the oven to 300°F.
2. Place all the ingredients in a bowl and toss to combine.
3. Spread the mixture in an even layer on a rimmed baking sheet and bake for 30 minutes.
NOTE: You can use any mixture of unsweetened cereal you prefer—choose what you love to eat!
