chai-spiced almonds

A handful of almonds is a great source of protein and vitamin E, but jazz the little dudes up with a handful of spices and they become totally addictive. My kids like almonds, but when I make these candylike Chai-Spiced Almonds, they can’t stop eating them!

Makes 2 cups

2 cups raw almonds

2 tablespoons honey

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground ginger

½ teaspoon ground cardamom

½ teaspoon salt

Canola oil spray

1. Preheat the oven to 400°F.

2. Place the almonds on a rimmed baking sheet and roast for 10 minutes.

3. Remove the almonds from the oven and place them in a bowl. Drizzle with the honey, sprinkle with the spices and salt, and stir to combine, making sure every almond is coated.

4. Lightly spray the baking sheet with canola oil spray and spread the almonds evenly on the sheet. Bake for 8 minutes more.

5. Remove from the oven and set aside to cool completely.

NOTE: These taste delicious warm, right out of the oven, but as they cool, the almonds will harden and have a more satisfying crunch. Store covered at room temperature up to 2 weeks.
