What fruit do you grab for most often at the market? I’d bet it’s an apple. And why not? They stay fresh longer than many other fruits, and kids tend to love them. Our family dentist told me that our kids should eat apples as often as possible because they’re great for their teeth.
In the fall, when I get a smidgen overzealous about apples, I make these muffins. Filled with bite-size pieces of apple and laced with the heart-warming combination of cinnamon and honey, these muffins are simply scrumptious.
Cooking spray (optional)
1 cup all-purpose flour
½ cup whole-wheat flour
2 teaspoons baking powder
¼ teaspoon salt
1 teaspoon ground cinnamon
½ cup buttermilk
½ cup honey
2 large eggs
1 teaspoon pure vanilla extract
¼ cup canola oil
2 cups peeled and chopped Granny Smith apples (about 2 large apples)
1. Preheat the oven to 400°F and line muffins cups or grease the pan with cooking spray.
2. In a medium bowl, whisk together the flours, baking powder, salt, and cinnamon.
3. In a large bowl, whisk together the buttermilk, honey, eggs, vanilla, and oil.
4. Stir the dry ingredients into the wet ingredients and mix until just combined.
5. Fold in the apples.
6. Pour the batter into the prepared muffin cups, filling ⅔ of the way. Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
7. Transfer to a wire rack to cool.
